What each ingredient does

Rice
Cooks into a thick, starchy base that holds the croquettes together when shaped.
Milk
Cooks with the rice to give a creamy, moist texture to the mixture.
Sugar
Adds sweetness and helps the outside brown when fried.
Egg
Coats the balls so the bread crumbs stick and form a crisp, golden shell.
Bread crumbs
Form a crisp, browned outer crust during frying.
Butter
Adds richness and fat that softens the texture and aids flavour.

The step that matters

Beat the mixture until thick and dry. Beating while the rice is still warm drives off moisture and develops a firm, stiff paste. If it stays wet, the balls will be soft and may fall apart in the hot fat.
