Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onion and carrot
Soften and sweeten as they fry, building a flavour base for the sauce.
Curry powder
Provides the main spice aroma, bloomed briefly in hot butter to release its fragrance.
Sour apple
Adds tartness and body that balances the richness of the sauce.
Tomato puree
Adds concentrated tomato flavour, colour and acidity to the sauce.
Espagnole sauce
Forms the savoury, thickened base that gives the sauce its body.

The step that matters

Fry the onion and carrot until light brown. Browning the onion and carrot develops sweet, savoury flavour through caramelisation. Frying too briefly leaves a raw, flat taste, while over-browning can make the sauce bitter.

Swap the apple

How well each one fits the dish's main ingredients (onion, carrot, butter, tomato, sauce):

  1. Avocadofits better
  2. Mangofits better
  3. Cherryfits better
  4. Applethe original

Fit is the average pairing score against onion, carrot, butter, tomato, sauce. Candidates are from the same food group and used in at least 100 recipes.
