What each ingredient does

Elderberries
Provide the main fruit flavor and the deep color of the ketchup.
Vinegar
Extracts the berry flavor and adds the sharp acidity that preserves the ketchup.
Shallots
Add savory depth and a mild oniony sweetness to the liquid.

The step that matters

Leave the elderberries in the hot vinegar overnight in a cool oven. The berries must steep long enough for the vinegar to draw out their color and flavor. Straining without squeezing keeps the liquid clear, since pressing releases bitter, cloudy plant material from the skins and pulp.

Swap the mace

How well each one fits the dish's main ingredients (vinegar, shallot, ginger, clove):

  1. Allspicefits better
  2. Cinnamonfits better
  3. Turmericfits better
  4. Macethe original

Fit is the average pairing score against vinegar, shallot, ginger, clove. Candidates are from the same food group and used in at least 100 recipes.
