Fowl, Roast

Ingredients

Directions

  1. Truss the fowl with the giblets under the wings.

  2. Singe the fowl.

  3. Roast the fowl, basting often with butter.

  4. Sprinkle flour on the fowl a few minutes before serving to make it look frothy.

  5. If desired, stuff the fowl with veal stuffing or ham forcemeat if it is very large.

  6. Serve with plenty of rich light-brown gravy and bread or oyster sauce.
