Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Garlic
Provides the main pungent flavour of the sauce once blanched and mellowed.
Butter
Adds richness and a silky, emulsified body to the sauce.
Lemon juice
Adds acidity that brightens the rich butter and balances the garlic.

The step that matters

Pressing the garlic mixture through a sieve. Pounding and sieving breaks the garlic into fine particles so the sauce stays smooth rather than gritty. Pressing too little leaves lumps that do not blend into the butter.

Swap the garlic

How well each one fits the dish's main ingredients (clove, pepper, butter, lemon):

  1. Thymefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Garlicthe original

Fit is the average pairing score against clove, pepper, butter, lemon. Candidates are from the same food group and used in at least 100 recipes.
