Goose Stuffing, Sage-and-onion

Ingredients

Directions

Prepare the onions

  1. Boil the onions in water until tender, about 20 to 30 minutes.

  2. Drain the onions and mince them finely.

Make the stuffing

  1. In a bowl, combine the minced onions, sage, bread crumbs, salt, mustard, sugar, and pepper.

  2. If desired, add the grated nutmeg and the apple.

  3. For added flavor, place a lemon with the yellow rind removed in the center of the stuffing before cooking the goose.

  4. Remove the lemon before serving to eliminate any unpleasant odors.

Sage
Adds a savory, herbal aroma that complements rich goose meat.
Apple
Adds moisture and a mild sweetness that balances the savory herbs and fat.
Prepared mustard
