What each ingredient does

Gooseberries
Form the preserve's main body and hold their shape when simmered gently until tender.
Sugar
Sweetens the fruit and, as a concentrated syrup, preserves it by drawing out water.

The step that matters

Simmering until tender but unbroken. Gooseberries held in simmering water can split if boiled hard. Gentle heat softens the flesh while the skins stay intact, so the fruit keeps its shape in the syrup.
