What each ingredient does

Feet, necks, livers, and gizzards of fowls
Provide the meat and collagen-rich connective tissue that give the gravy body and savoury flavour as they simmer.
Toasted bread
Its toasted crust adds a roasted, deeper flavour and helps thicken the liquid.
Savoury herbs
Add aromatic flavour that infuses into the simmering water.
Small onion
Adds sweetness and aromatic depth to the stock as it cooks down.

The step that matters

Simmering gently for an hour or more. A gentle simmer extracts flavour and gelatin slowly, while a hard boil makes the liquid cloudy and greasy and can toughen the meat.

Swap the onion

How well each one fits the dish's main ingredients (liver, bread, pepper, mushroom, ketchup):

  1. Capsicumfits better
  2. Shallotfits better
  3. Tomatofits better
  4. Onionthe original

Fit is the average pairing score against liver, bread, pepper, mushroom, ketchup. Candidates are from the same food group and used in at least 100 recipes.
