Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream of tartar
Dissolves to give the drink its tart, acidic flavour.
Lemon rind
Adds aroma and bright citrus flavour from its oils.
Lump sugar
Sweetness that balances the sharpness of the cream of tartar.

The step that matters

Cover the jug and let it stand. Covering keeps the water hot so the cream of tartar and sugar dissolve fully and the lemon oils infuse. Letting it cool undisturbed lets the sediment settle, so pouring off leaves a clear drink.
