Jam Puffs, or Turnovers
Ingredients
Directions
The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare puff paste or short crust.
Roll it out to ⅛ inch thick.
Cut into rounds or squares using a saucer or plate.
Spread a little jam on half of the pastry.
Wet the edges with water.
Fold the other half over and press the edges together.
Bake in a 400°F (200°C) oven for about 20 minutes.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
