Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Pound the cold veal kidney and surrounding fat in a mortar.

  2. Season with salt, pepper, lemon rind, and nutmeg.

  3. Mix with the whisked egg white.

Assemble and bake

  1. Spread the mixture on squares of toast.

  2. Cover the toast with the beaten egg yolk.

  3. Sprinkle the toast with bread crumbs.

  4. Melt the butter in a dish.

  5. Add the toasts to the melted butter.

  6. Bake in a hot oven (400 °F / 200 °C) for 15 minutes.

Serve

  1. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal kidney
Provides the main meaty body and rich flavour of the spread.
Egg white
Binds the pounded kidney mixture so it spreads evenly on the toast.
Egg yolk
Enriches the topping and helps it brown in the oven.
Bread crumbs
Add a crisp, browned surface on top of the toast.
Butter
Adds richness and helps the toast brown and crisp as it bakes.

The step that matters

Pound the kidney thoroughly while cold. Pounding the cold kidney and its fat breaks the tissue into a smooth, cohesive paste. If it is not fully broken down, the mixture stays lumpy and will not spread evenly or bind well with the egg white.

Swap the nutmeg

How well each one fits the dish's main ingredients (veal, pepper, lemon, egg, bread, butter):

  1. Parsleyfits better
  2. Sagefits about as well
  3. Marjoramfits about as well

Fit is the average pairing score against veal, pepper, lemon, egg, bread, butter. Candidates are from the same food group and used in at least 100 recipes.
