Prepare the head

  1. Scald, scrape, and wash the lamb's head thoroughly.

  2. Place the head and fry in a stewpan with onion, parsley, thyme, carrot, turnip, bay leaf, peppercorns, salt, and cold water.

  3. Bring to a boil, remove scum, and simmer gently for 1 hour.

  4. Divide the head, remove the tongue and brains, and dry the halves in a cloth.

Make the mince

  1. Mince the heart, liver, half of the lights, brains, and tongue (removing skin) very finely.

  2. Season with salt, pepper, and nutmeg.

  3. Put the minced meat in a saucepan with strained gravy thickened with butter and flour, and add mushroom ketchup.

  4. Cover and simmer gently for 30 minutes, stirring occasionally.

Bake and serve

  1. Brush the head with beaten egg, sprinkle with bread crumbs, and bake at 350°F (175°C) or place before the fire until lightly browned, basting with dripping.

  2. Serve the head in the center of a hot dish, surround with mince, and garnish with parsley.

  3. Squeeze lemon juice over the head just before serving.
