Ingredients

Directions

Prepare the lamb

  1. Remove the bones from the breast of lamb and season the meat with pepper and coarse sea salt.

  2. Fry the lamb in hot fat until lightly browned on both sides.

Stew

  1. Drain the lamb from the fat and place it in a stewpan with thin slices of fat bacon and enough white stock to barely cover it.

  2. Add the button mushrooms, minced parsley, chives, salt, and peppercorns.

  3. Bring the liquid to a boil, then reduce the heat and simmer gently for 1.5 hours.

Serve

  1. Remove the lamb and place it on a hot dish, squeezing lemon juice over it.

  2. Strain the sauce to serve with the lamb, placing the mushrooms around the meat.

What each ingredient does

Breast of lamb
Provides the main meat, which becomes tender during slow simmering.
Fat bacon
Adds savoury fat and flavour to the stewing liquid and the meat.
White stock
Forms the cooking liquid that gently braises the lamb and builds the sauce.
Button mushrooms
Add earthy flavour and body to the stew and sauce.
Lemon
Adds acidity that brightens the rich flavour of the lamb.

The step that matters

Simmer gently after boiling. Once the liquid boils, reducing the heat to a gentle simmer keeps the lamb tender and the sauce clear. A hard boil toughens meat proteins and can make the liquid cloudy.

Swap the lemon
