Why it works: Onion and potato are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the layers

  1. Cut the mutton into chops, trimming away excess fat.

  2. Layer mutton in a brown earthenware stewpot.

  3. Add sliced kidneys, thinly sliced onion, oysters, and sliced potatoes.

  4. Sprinkle with salt, pepper, and curry powder.

  5. Repeat layering until the dish is full.

Bake and serve

  1. Place whole potatoes on top and pour in oyster liquor and water.

  2. Bake in a 350°F (175°C) oven for 3.5 hours until the top potatoes are brown and crisp.

  3. Pour boiling gravy over the meat before serving.

  4. Serve in the baking dish, garnished with a napkin.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Provides the main meat, whose fat and juices enrich the stew as it slowly cooks.
Potatoes
Form the layers and topping, thickening the liquid and browning and crisping on the surface.
Onions
Soften during the long bake, adding sweetness and depth to the savoury broth.
Oysters
Add a briny, savoury flavour that blends into the cooking liquid.
Mutton kidneys
Contribute rich, savoury flavour and a tender texture to the layered meat.

The step that matters

Bake until the top potatoes are brown and crisp. The long, moderate oven time lets the meat become tender while the exposed potatoes dry and brown. Liquid must be kept below the top layer so the surface can crisp rather than steam.
