Larks, Croustade of

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Prepare the larks

  1. Bone the larks, cut off the legs and heads, and open them.

  2. Season the larks slightly, then place a small piece of veal forcemeat and a truffle into each bird.

  3. Roll the larks into a ball shape and place them in a pie dish.

  4. Season with salt and pepper, then pour clarified butter over them.

  5. Bake in a hot oven (400°F/200°C) for 15 minutes.

Prepare the croustade

  1. Prepare the croustade by cutting the crust from the stale loaf and scooping out the center.

  2. Fry the loaf in very hot lard until browned, then drain and dry it.

  3. Stick the croustade in the middle of the dish with a paste made of egg white and flour.

  4. Heat the croustade in the oven for a few minutes before adding the larks.

Serve

  1. Garnish with stewed mushrooms and aspic jelly, and serve with brown sauce.

What each ingredient does

Larks
Provide the main meat, which is rolled and baked until tender in its own butter.
Clarified butter
Adds richness and moisture, coating the birds so they stay juicy in the oven.
Veal forcemeat
Adds a soft, moist stuffing that keeps the lean larks succulent.
Truffle
Contributes a strong, earthy aroma that perfumes the stuffed birds.
Stale loaf
Forms a sturdy, crisp case that holds the larks and stays firm when fried.
Egg white
Binds the flour paste that fixes the croustade to the dish.

The step that matters

Frying the loaf in lard. The lard must be very hot so the bread browns and crisps quickly on the outside. If it is not hot enough, the loaf absorbs fat, turns greasy, and loses its firm shape.
