Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Clean the mackerel and remove the roes.

  3. In a bowl, mix bread crumbs, butter, herbs, parsley, anchovy, pepper, salt, cayenne, and egg.

Stuff and bake

  1. Fill the cavity of each fish with the forcemeat mixture.

  2. Place the fish in a baking dish, season with pepper and salt, and add small bits of butter on top.

  3. Bake for 30 minutes.

Serve

  1. Serve with maitre d'hotel sauce or melted butter, placing the roes in the baking dish.

What each ingredient does

Bread crumbs
Bind the stuffing and soak up melted butter to keep it moist.
Egg
Binds the forcemeat so it holds together while baking.
Butter
Adds richness and moisture, melting into the fish and crumbs as it bakes.
Anchovy
Adds savory depth to the stuffing without a distinct fishy taste.
Mackerel
The main fish, which cooks in its own cavity around the stuffing.
