Madeira Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat your oven to 350°F (175°C).

Make the batter

  1. Cream together the butter and lard with the sugar until light and fluffy.

  2. Beat in the eggs and milk until well combined.

  3. Sift the flour and baking powder together, then stir into the mixture.

  4. Add the sherry or Madeira and mix well.

Bake and serve

  1. Pour the batter into a greased cake tin, leaving room for rising.

  2. Bake for about 1.5 hours, then place strips of peel on top before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter and lard
Fat that creams with sugar to trap air, giving a tender, rich crumb.
Sugar
Sweetens the cake and, creamed with fat, helps build its light texture.
Eggs
Provide structure as they set, and add richness and moisture to the crumb.
All-purpose flour
Forms the main structure of the cake as its proteins set during baking.
Baking powder
Releases gas in the batter so the cake rises in the oven.

The step that matters

Pour the batter into a greased cake tin, leaving room for rising.. Batter rises considerably in the oven. Filling the tin too full can cause overflow, while a well-greased tin helps the cake release cleanly after baking.
