Mushrooms, Baked or Broiled

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash and dry the flap mushrooms, then peel the tops.

  2. Place the mushrooms in a tin baking dish, without the stems.

Season and bake

  1. Season with pepper, coarse sea salt, and a little pounded mace if desired.

  2. Dot the top with small bits of butter.

  3. Bake in a preheated oven at 400°F (200°C) for 20 minutes.

Serve

  1. For broiled mushrooms, serve on a hot dish with a small piece of butter on each and a few drops of lemon juice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flap mushrooms
Form the main body of the dish and soften into a tender, juicy base when cooked.
Butter
Adds richness and moisture, melting over the mushrooms as they cook.
Lemon juice
Adds acidity that brightens the buttery, savoury flavour of the mushrooms.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (mushroom, pepper, butter, lemon):

  1. Thymefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against mushroom, pepper, butter, lemon. Candidates are from the same food group and used in at least 100 recipes.
