What each ingredient does

Fresh button mushrooms
Form the garnish itself, softening and releasing moisture as they cook in the liquid.
Lemon juice
Acidity that slows browning, helping the mushrooms stay pale.
Butter
Fat that adds richness and a smooth, glossy coating to the mushrooms.

The step that matters

Adding the mushrooms to the lemon water. Cut mushroom surfaces darken quickly when exposed to air. Getting them into the acidic lemon water promptly slows browning and keeps the garnish pale.
