Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Clean and trim the mushrooms.

  2. Stew the mushrooms in a little broth until tender.

  3. Remove the mushrooms and stew the stalks and trimmings until tender.

  4. Drain and mince the stalks and trimmings finely.

  5. Mix the minced mixture with butter, pepper, salt, and parsley.

Stuff and bake

  1. Fill the inside of the mushrooms with the mixture.

  2. Sprinkle fine bread crumbs over the stuffed mushrooms.

  3. Bake in a Dutch oven at 350°F (175°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Large mushrooms
Act as the edible cups that hold the filling while they soften.
Butter
Adds richness and moisture to the minced filling and helps it brown.
Fine bread crumbs
Form a crisp, golden topping that helps the top brown in the oven.
Minced parsley
Adds fresh, green aroma that brightens the savory filling.

The step that matters

Drain the stalks well before mixing. Mushrooms release water as they cook, and excess liquid in the filling makes it soggy and dilutes its flavor. Draining and mincing finely lets the filling bind with butter and hold its shape.

Swap the parsley

How well each one fits the dish's main ingredients (mushroom, butter, pepper, bread):

  1. Thymefits about as well
  2. Parsleythe original
  3. Marjoramfits about as well
  4. Sagefits less well

Fit is the average pairing score against mushroom, butter, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
