Onions and Cucumbers

Ingredients

Directions

  1. Peel the cucumbers and cut them into quarters.

  2. Remove the seeds and cut each quarter into three pieces.

  3. Peel the same number of small onions as cucumber pieces.

  4. Soak cucumbers and onions in equal parts vinegar and water with some pepper and salt for 2 hours.

  5. Drain the mixture and add enough stock to barely cover the vegetables.

  6. Boil down until it reaches a glaze consistency.

  7. Stir in the juice of a lemon and a little sugar.

  8. Serve as a dish by itself or as an accompaniment to cutlets.
