Why it works: Apple and orange match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 2,230 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓

Orange Jelly

Ingredients

Directions

Prepare the juice

  1. Prepare 4 pints of apple juice as directed for apple jelly.

  2. Add the strained juice of 3 oranges and the thin yellow rind of 3 oranges to the apple juice.

  3. Strain the mixture through a jelly bag to make it clear.

Make the syrup

  1. In a saucepan, boil 2 ½ pounds of loaf sugar with 1 quart of water.

  2. Skim off the thick white scum that forms on the sides of the pan.

  3. Once it becomes a thick syrup, add the orange juice mixture.

Set and store

  1. Boil until a small amount of jelly placed on a plate sets.

  2. Pour into jars for storage.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apple juice
Provides the pectin and body that help the jelly set.
Loaf sugar
Sweetens the jelly and helps it set firm when boiled with the juice.
Orange juice
Adds bright acidity and citrus flavour to the jelly.
Orange rind
Contributes aromatic oils that flavour the jelly.

The step that matters

Boil until the jelly sets on a plate. Jelly sets only when enough sugar and pectin are concentrated by boiling. Testing a small amount on a cold plate shows whether it will gel, so boiling too little leaves it runny and boiling too long can make it stiff.

Swap the orange

How well each one fits the dish's main ingredients (apple, sugar):

  1. Pearfits better
  2. Vanillafits better
  3. Apricotfits better
  4. Orangethe original

Fit is the average pairing score against apple, sugar. Candidates are from the same food group and used in at least 100 recipes.
