Ox Palates

Ingredients

Directions

  1. Dissolve the salt in lukewarm water in a large bowl.

  2. Add the ox palates and let them soak for several hours, pressing them frequently to remove mucus.

  3. Drain the palates and place them in a saucepan with cold water over low heat.

  4. Gradually heat the water; before it boils, lift out the palates and scrape off the horny skin until they look white and clear.
