Oysters, Baked

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Mix the bread crumbs, coarse sea salt, white pepper, and grated nutmeg in a bowl.

  3. Remove the gills from the oysters and dip them in the beaten egg.

  4. Roll the oysters in the seasoned bread crumbs.

Bake and serve

  1. Place each oyster in its lower shell and top with a small piece of butter.

  2. Bake the oysters in the oven for a few minutes until hot.

  3. Before serving, squeeze a little lemon juice on top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Form the main body of the dish, becoming tender and warm when heated through.
Bread crumbs
Form a crisp, golden coating that browns in the oven and holds the seasoning.
Beaten egg
Acts as a binder that helps the bread crumbs adhere to the oysters.
Butter
Adds richness and moisture, melting over the oysters as they heat.

The step that matters

Bake only until hot. Oysters toughen and shrink when overcooked, so they should be heated just until warmed through and the crumb coating is set.

Swap the white pepper
