Ingredients

Directions

Prepare the oysters

  1. In a saucepan over gentle heat, cook the oysters for 1-2 minutes to firm them up.

  2. Remove the gills from the oysters and cut each into 6-8 pieces.

Make the sauce

  1. In a stewpan, mix the butter and flour until smooth, then add the oyster juice, cayenne, anchovy sauce, nutmeg, and milk.

  2. Stir over heat until the sauce is smooth and thick, then remove from heat.

  3. Add the gravy, beaten egg yolks, and lemon juice, stirring until the eggs are set.

  4. Add the oysters and heat until hot, then spread the mixture on a plate to cool.

Shape and fry

  1. Once cool, shape the mixture into cork or ball shapes.

  2. Dip each in a beaten egg yolk mixed with oil, then roll in bread crumbs.

  3. Fry in hot fat until crisp and lightly browned, about 5-7 minutes.

  4. Drain on a cloth over an inverted sieve and serve garnished with fried parsley.

What each ingredient does

Oysters
Provide the main flavour and the body of the croquette filling.
Butter
Enriches the sauce and adds richness to the filling.
Flour
Thickens the milk and oyster juice into a binding sauce that holds the croquettes together.
Egg yolks
Set when heated, binding the filling so it holds its shape.
Milk
Forms the liquid base of the sauce, adding moisture and softness to the filling.
Bread crumbs
Form a crisp, golden coating when fried.

The step that matters

Cooling the mixture before shaping. The filling must be fully cool and firm before shaping; if it is warm, the starch-thickened sauce stays soft and loose, so the croquettes may collapse or break open in the hot fat.
