Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and help it set into a firm coating around the oysters.
Bread crumbs
Form a crisp, browned outer crust when fried.
Oysters
Provide the main filling and a briny, savory flavor.

The step that matters

Fry in hot fat until brown and crisp. Fat that is hot enough sets the egg batter and crumbs quickly, creating a crisp crust before the oysters overcook. Fat that is too cool soaks in and leaves the coating greasy and soft.

Swap the mace

How well each one fits the dish's main ingredients (oyster, egg, milk, pepper, nutmeg, lemon, bread):

  1. Parsleyfits better
  2. Marjoramfits better
  3. Cinnamonfits better
  4. Macethe original

Fit is the average pairing score against oyster, egg, milk, pepper, nutmeg, lemon, bread. Candidates are from the same food group and used in at least 100 recipes.
