Pickles, Mixed

Ingredients

Directions

  1. In a large earthen jar, combine 1 gallon of brown vinegar with 4 ounces of bruised ginger and 4 ounces of mustard seed.

  2. In a bowl, mix together ¼ pound of salt, 1 ounce of ground black pepper, ¼ ounce of cayenne, 2 blades of finely powdered mace, ¼ pound of unmixed mustard, and 2 ounces of curry powder.

  3. Add a little cold vinegar to the dry ingredients to make a paste, then mix this paste into the vinegar in the jar.

  4. Cover the jar tightly and keep it in a warm place, stirring with a wooden spoon every day for a month.

  5. Gather different vegetables as they come into season.
