Directions
The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Pare the pineapples and remove the eyes with a knife.
Cut the pineapples into slices and place them in a single layer on a large dish.
Sprinkle powdered sugar over the slices to cover them.
Keep the dish in a warm place until the fruit is dry, turning it daily.
Once dry, place the slices on a baking sheet and bake in a preheated oven at 400°F (200°C) for 10 minutes.
Allow to cool completely and store in a tin box with writing paper between each layer.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
