Plovers' Egg Salad

Ingredients

Directions

  1. Line a plain charlotte mould with pale aspic jelly.

  2. Slice the hard-boiled plovers' eggs.

  3. Arrange the largest center pieces in a ring at the bottom, overlapping, with a star-shaped slice of truffle in the center.

  4. Place a row of chervil leaves in between.

  5. Continue layering with rows of egg slices and chervil leaves until within an inch of the edge of the mould, overlapping each row in the opposite direction.
