Pork Cutlets and Onions

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Trim the cutlets neatly and sprinkle with pepper.

  2. Grill the cutlets for about five minutes, turning as needed.

  3. Dip the cutlets in warmed butter and coat with browned bread crumbs mixed with a pinch of cayenne and mixed herbs.

  4. Press the bread crumbs firmly onto the cutlets.

  5. Finish cooking in a 350°F (175°C) oven, on the grill, or by frying.

  6. Place a ring of fried bread in the center of the dish.

  7. Spread the fried bread thickly with fried onions.

  8. Fill the center with apple sauce mixed with a small amount of rich brown sauce.

  9. Arrange the cutlets around the fried bread and pour additional apple sauce around the base.
