Pork, Fresh, Stewed

Ingredients

Directions

  1. Cut the spare-rib into chops.

  2. Fry the chops in a little fat until lightly browned.

  3. Remove and drain the chops, then place them in a clean stewpan.

  4. Pour enough boiling water over the chops to cover them.

  5. Bring the liquid to a boil, then reduce heat and simmer gently until the chops are cooked through.

  6. Thicken the gravy with flour and butter, and season with pepper and coarse sea salt.

  7. Boil for a few more minutes, then serve the pork on a hot dish with the gravy poured around it.
