Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Cure the pork

  1. Rub the pork with saltpetre and common salt.

  2. Leave the pork for 3-4 days, turning and rubbing daily.

Make and bake the saveloys

  1. Mince the pork finely and mix with white pepper, chopped sage, and bread crumbs.

  2. Fill prepared skins with the mixture, tie securely at both ends.

  3. Bake in a moderate oven (350°F / 175°C) for 30 minutes.

  4. Serve hot or cold.

What each ingredient does

Pork
Provides the meat that forms the main body and texture of the sausage.
Saltpetre
Cures the meat, helping it keep its pink color and firm texture during curing.
Common salt
Draws out moisture and seasons the meat, aiding the curing process.
Bread crumbs
Absorbs juices and adds body, helping the filling hold together and stay moist.

The step that matters

Curing the pork for 3-4 days. Saltpetre and salt must reach the meat evenly, so turning and rubbing it daily matters. Uneven curing can leave spoilage risk or poor colour and texture.
