Potatoes, Scalloped

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Mash the potatoes with butter and a little hot milk.

  2. Butter some scallop shells or patty pans and fill them with the mashed potatoes.

  3. Smooth the top and draw the back of a fork over them.

  4. Sprinkle finely grated bread crumbs on top and add small pieces of butter.

  5. Place the potatoes in a 400°F (200°C) oven until they are brightly browned, about 15 minutes.

  6. Serve in the scallop shells on a neatly folded napkin.
