What each ingredient does

Bicarbonate of soda
Reacts with the acid to release carbon dioxide, which makes the water fizz.
Tartaric acid or citric acid
Reacts with the bicarbonate to release carbon dioxide and gives the drink a sour taste.

The step that matters

Mix the two solutions and drink immediately. The reaction releases carbon dioxide quickly, and the fizz escapes from the glass as it stands, so the drink is best consumed right after mixing.
