Make the curry

  1. Melt the butter in a saucepan over medium heat.

  2. When it boils, add the sliced onions and fry until golden brown.

  3. Stir in the curry powder and fry for 3-4 minutes, stirring well.

  4. Add the hot water and salt, and bring to a boil.

  5. Add the sliced pumpkin and another ounce of sliced onions.

  6. Cover the saucepan and simmer gently for 1 hour, or until the pumpkin is tender, being careful not to break the pieces.

What each ingredient does

Ripe pumpkin
Forms the body of the dish and becomes tender and soft during gentle simmering.
Butter
Carries the curry powder's flavour and adds richness while the onions brown.
Sliced onions
Browning in the fat builds sweetness and savoury depth as the base of the curry.
Curry powder
Provides the spiced aroma; blooming it briefly in hot fat brings out its flavour.

The step that matters

Simmering the pumpkin gently. A vigorous boil can break the soft pumpkin pieces apart and make the curry mushy. Gentle simmering with the lid on cooks the pumpkin evenly while keeping the slices intact.

Swap the pumpkin

How well each one fits the dish's main ingredients (butter, onion):

  1. Avocadofits better
  2. Coconutfits better
  3. Mangofits better
  4. Pumpkinthe original
