Raised Pie
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Knead the pastry well with your fingers, ensuring even thickness.
Fill the pie with your desired filling.
Roll out the remaining pastry to cover the pie, moisten the edges with a little egg, and place it on top.
Press down securely and pinch the edges with a pastry pincher.
Make a small hole in the center and decorate with pastry leaves or other designs.
Brush the top with egg and bake in a preheated oven at 400°F (200°C).
Once baked, remove from the oven and pour in a little good gravy that will jelly when cold.
If using a mold, butter it and line it with pastry before filling and covering.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
