Why it works: White wine and vinegar are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 1,776 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓
Raspberry Vinegar, Superior
Ingredients
Directions
Infuse the raspberries
Place 1 pound of raspberries in a stone jar or large glass bottle.
Pour 1 quart of white wine vinegar over the raspberries and cover tightly.
Let the mixture infuse for 4 days.
Strain the liquid and pour it over another pound of fresh raspberries.
Infuse for another 4 days and repeat the straining process a third time.
After straining, place the fruit in a sieve lined with muslin and let the juice drip for several hours without pressure.
Make the syrup and bottle
In an enamelled pan or clean brass pan, combine the vinegar with 1 pound of powdered sugar for each pint of vinegar.
Boil gently for 5 minutes, skimming off any scum that rises.
Let the vinegar cool overnight, then bottle it and cork lightly.
After 5 days, cork tightly and seal the corks.
Store in a dry, cool place.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Raspberries
- Provide the flavour and aroma that the vinegar takes up during repeated infusion.
- White wine vinegar
- Acts as the solvent that extracts flavour from the fruit and gives the sharp acidity.
- Powdered sugar
- Adds sweetness that balances the sharpness of the vinegar and helps preserve the finished liquid.
The step that matters
Boil gently and skim. Boiling gently for only 5 minutes dissolves the sugar and brings the liquid to a stable state. Skimming removes scum that would otherwise spoil the flavour and keeping quality.
