Ratafia, Red

Ingredients

Directions

Prepare the fruit

  1. Infuse bruised cloves in brandy for flavoring a fortnight before making the ratafia.

  2. In a large bowl, combine black cherries, raspberries, strawberries, and black‑heart cherries. Bruise the fruit well.

  3. Let the mixture stand for 24 hours, then drain off the juice.

  4. Measure the juice.

Make the liqueur

  1. For each pint, boil ¼ pound of loaf sugar with 2 tablespoons of water to make a clear syrup.

  2. Add the syrup and 1 quart of flavored brandy to the juice.

  3. Filter the liqueur through a jelly bag.

  4. Bottle it and store for use.
