Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Onions
- Form the main body of the soup and, when browned, add deep sweet flavour.
- Butter
- Fat for frying the onions, helping them brown and carry flavour.
- Stock
- Liquid that softens the onions and makes up the soup's body.
- Rice
- Thickens the soup as it cooks and softens it into the broth.
The step that matters
Browning the onions. Onions need enough time in hot fat to brown rather than steam. Browning drives Maillard reactions that create the deep, savoury colour and flavour the soup depends on.
Swap the white pepper
How well each one fits the dish's main ingredients (onion, butter, rice):
- Garlicfits better
- Turmericfits better
- Capersfits better
- White pepperthe original
Fit is the average pairing score against onion, butter, rice. Candidates are from the same food group and used in at least 100 recipes.
