Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the bulk of the croquette; cooking it thick and dry lets it hold its shape when shaped.
Egg
Binds the coating so the bread crumbs adhere and form a crisp outer shell.
Bread crumbs
Form a crisp, golden outer crust when fried.
Parmesan cheese
Adds savory, salty flavor and helps the rice mixture brown slightly.

The step that matters

Cooking the rice until thick and dry. Rice that is still wet or loose will not hold its shape when formed and may burst or fall apart in hot oil. Draining and cooling it first firms the starch so the balls stay intact.

Swap the white pepper

How well each one fits the dish's main ingredients (rice, parmesan cheese, mace, turkey, egg, bread, milk):

  1. Nutmegfits better

  3. Celeryfits better
