Rose-water
Ingredients
Directions
Gather fresh red rose buds on a dry morning when they are fully bloomed.
Cut off the heels and layer the petals in a clean cask, sprinkling coarse sea salt between the layers.
Fill a still two-thirds with the salted petals and add a little water at the bottom.
Place the still in a water bath and distill over a very slow fire.
Collect the first product in several phials to examine it.
Discard any portion that has a burnt smell and stop the distillation.
Store the rose-water in a cool, dark place in a stone jar with a cork.
