Raw egg yolks
Bind the chopped mixture into a spreadable paste.
Fat
Adds richness and moisture to the chopped kidney filling.
Mushrooms
Add earthy flavour and moisture to the filling.
Butter
Adds richness and a rounded, savoury flavour.
Bread crumbs
Form a crisp topping that adds texture over the filling.

The step that matters

Place the prepared slices on a dish, cover with a hot lid, and strew live cinders on top.. The raw egg yolks and raw eggs in the filling and topping must be heated enough to cook and set safely. Covering with a hot lid traps heat around the slices so the surface cooks evenly while the bread crisps.
