Why it works: Mustard and watercress match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 293 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Salad Sandwiches

Ingredients

Directions

  1. Prepare the bread as usual.

  2. Wash and dry the cress and watercress, then place them in a bowl with mayonnaise sauce.

  3. Spread the salad mixture between slices of bread when ready to serve.

  4. For another method, butter thin slices of bread.

  5. Just before serving, place a little salad tossed in mayonnaise between two slices.

  6. Press the sandwiches together, cut into small pieces, and serve.
