Salmon and Potato Pie

Oven, in the book's wordsA brisk oven

Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Remove skin and bones from the salmon and break it into small pieces.

  2. Season each pound of salmon with salt, white pepper, and cayenne.

  3. Butter a shallow pie dish and layer the bottom with lightly mashed potatoes mixed with butter, milk, and egg yolk.

  4. Place the seasoned salmon on top of the potato layer and moisten with any leftover fish sauce.

  5. Cover with another layer of mashed potatoes, roughen the top with a fork.

  6. Bake in a brisk oven at 400°F (200°C) until the surface is browned and the pie is hot, about 30 minutes.

  7. Serve in the baking dish.
