What each ingredient does

Salt butter
Provides the fat and flavour that the dish is built around.

The step that matters

Washing the butter in several changes of water. Butter is washed to remove the buttermilk and salty brine it holds, which can turn sour and spoil its flavour. Repeated changes of clean water carry away more of these milk solids than a single rinse would.
