Salt Fish Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Soak and boil the salt fish, then remove skin and bones, and cut the flesh into neat squares.

  2. In a buttered pie dish, layer sliced potatoes, fish, hard-boiled eggs, and onions.

  3. Season each layer with pepper and dry mustard, adding small pieces of butter throughout.

  4. Pour a little egg sauce over the layers, then cover with pastry.

  5. Bake in a preheated oven at 400°F (200°C) until the pastry is golden and the pie is cooked through.

  6. Alternatively, use mashed potatoes to cover the pie instead of pastry, and omit the onions if desired.
