What each ingredient does

Eggs
Beaten eggs bind the milk-soaked bread and set it into a firm, golden coating when fried.
Bread
Soaked and fried slices form the crisp, browned base that holds the toppings.
Hard-boiled egg yolks
Minced yolks thicken the sauce and add a rich, creamy body.
Sardines
Minced fish provides the savory, oily flavor of the topping.
Capers
Brined buds add a sharp, salty acidity that cuts the richness of the sauce.
Butter
Melted butter carries the herbs and flavors and adds richness to the sauce and sardine mixture.

The step that matters

Warm the dish in the oven for a minute. Egg yolk-based sauces and poached eggs can overcook or curdle with too much heat, so only a brief warming keeps the eggs soft and the sauce smooth.

Swap the tarragon

How well each one fits the dish's main ingredients (bread, egg, milk, butter, parsley, pepper, lemon):

  1. Marjoramfits about as well
  2. Thymefits about as well
  3. Nutmegfits about as well
  4. Tarragonthe original

Fit is the average pairing score against bread, egg, milk, butter, parsley, pepper, lemon. Candidates are from the same food group and used in at least 100 recipes.
