SEMOLINA PUDDING, BAKED

Ingredients

  • 1½ pints milk
  • Almonds or lemon rind (for flavoring)
  • 3 tablespoons semolina
  • 2 tablespoons sugar
  • 1 slice fresh butter
  • 4 eggs (or 2 for a plain pudding)
  • Pastry for lining the pie dish

Directions

Flavor the milk with almonds or lemon rind and bring it to a boil in a saucepan.

Once boiling, gradually add the semolina, sugar, and butter, stirring until the mixture thickens slightly.

Remove from heat and let it cool, then gradually mix in the beaten eggs.

Line a pie dish halfway with pastry and butter the bottom.

Pour the semolina mixture into the dish and bake in a moderate oven at 350°F (175°C) for about 30 minutes, or until set.

Serve with stewed fruit or wine sauce.
