Sole, with Mushrooms

Ingredients

Directions

Poach the sole

  1. Clean the soles but do not skin them.

  2. Place the soles in a saucepan and cover with equal parts milk and water. Add the butter and lemon juice.

  3. Bring to a gentle boil, then reduce heat and let simmer for 6-7 minutes until cooked through.

Serve

  1. Remove the soles, drain, and place on a hot dish. Pour the white mushroom sauce over the soles before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Soles
Provide the main protein, which turns opaque and firm as it cooks through.
Butter
Adds richness and a smooth, rounded mouthfeel to the poaching liquid.
Lemon juice
Adds a bright acidity that balances the richness of the butter and sauce.
Milk
Gives the poaching liquid a mild creaminess and gentle flavour.

The step that matters

Simmer gently, do not boil hard. A hard boil toughens and breaks up delicate fish proteins, making the flesh dry and flaky in the wrong way. A gentle simmer cooks the sole evenly and keeps it moist and tender.
