Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the fritters and give them a soft, tender interior.
Egg yolk
Binds the mixture so the fritters hold their shape while frying.
Ham
Adds savoury flavour and a salty, meaty taste throughout the mixture.
Bread crumbs
Form a crisp outer crust that browns during frying.

The step that matters

Fry in hot oil until golden brown. If the oil is not hot enough, the coating absorbs oil and turns greasy before it crisps. Oil that is too hot browns the crumbs before the centre heats through.

Swap the potato

How well each one fits the dish's main ingredients (ham, parsley, egg, pepper, bread):

  1. Carrotfits better
